27 november


hi friends!  i hope all you who celebrated had a lovely thanksgiving.  we spent far too much time in the car, but had a great time (even though my camera broke about three songs into jared's show on wednesday night-crap!) seeing friends and family and eating lots of amazing food.  it appears winter is here- yesterday as i sat on the couch finishing up the first of three holiday sweaters for my nephews (gotta get used to saying my nephews instead of jared's nephews- it's hard after five years!), i saw two cross country skiiers pass by in the park.  i also saw about eleven bikers, though, so go figure!  

this weekend we're laying low.  going to be super early, cleaning up the house, getting some errands done, lots of knitting, and having some friends over for breakfast tomorrow.  i think i'll make a tofu scramble and these pumpkin muffins. (i've never made it as muffins, but i can't imagine why that wouldn't work, right?  and i always throw in a handful of semi-sweet chocolate chips too, yum).  

speaking of which, i'd better take that jar of pumpkin puree out of the freezer!  do you guys do that?  just cut a pumpkin in half, scoop out the insides put the halves face down on a lightly oiled pan and roast at 350 for about and hour (or until soft).  then pull the peels off (they come off easily) and puree the pulp.  you can do this in a food processor or just mash with a fork.  while you're doing that, wash the seeds off, toss with some olive oil, salt, and pepper and throw them in the oven for about 15 minutes for a delicious snack.  freeze the puree in pint jars and you'll always have some pumpkin on hand for baking or soup emergencies!
