More beautiful veggies

Yum. That's really all I have to say about this post.


These were boiled, slipped the skin off, marinated in balsamic with a little sea salt, and then served with some fresh red lettuce (also from the garden).


These have been enjoyed with a variety of dishes- cut up in falafel sandwiches, sliced on bagels with cream cheese and fresh thyme and rosemary, mixed in with black beans and hot sauce. Oh the possibilities are endless!



Need I say more? Too large to be tasty- loaves of zucchini bread are filling up the freezer. I've got four more that will be eaten.
