what's for breakfast?


Good morning everyone! So, I'm having a bit of a breakfast struggle and I was hoping you could help me out. I've gotten into a little rut here. You see, most mornings start with two slices of toast topped with some cheddar cheese. Occasionally there's some sliced avocado on top. Sometimes there's a side of scrambled or fried eggs. Now and then there's a piece of fruit. And of course, there's always coffee, but was that ever really a question?

Don't get me wrong, I love me some bread and cheese. I think it might be my favorite meal of all time, in fact. However, I think I might need to be starting my day with something lighter. Something that still fills me up, but gives me a little more energy. Maybe I'm imagining it, but I've started to think that the carbs and cheese in the mornings are making me drag a bit, especially as I start my workday. After my ten minute bike ride to work, I'm often ready for a snack by 10am.

Today, in my effort to branch out, I had a bowl of plain yogurt with a sliced peach, some flax seeds and a little drizzle of maple syrup. Sometimes I will break out from my toast with cheese, and have some granola and yogurt, or homemade muffins but we don't always have those other options. And even when we do, honestly, I usually go for the bread and cheese anyways.

  1. On days where I can get it together I find that high protein/high fiber fills me up the best. I try to forgo orange juice (or just drink less of it), limit myself to one cup of coffee, and then the meal.

    My favorites are Greek yogurt with honey and walnuts or almonds along with some fruit, or oatmeal with strawberries and sliced almonds. I think the nuts and dairy keep me going.

    If I know it's going to be a busy week I try to hardboil a few eggs in advance, or make some quinoa muffins.

  2. Yogurt with granola. I just figured out last week that granola will keep me feeling full for way longer than any other breakfast food.

  3. my standard is cereal, but i don't always get full by that. granola really fills me up and so does oatmeal with raisins and brown sugar. you could cut up some veggies the night before and have them all ready to stir into eggs for breakfast? whenever i need to be full for a long time, i make a nice veggie-filled scramble. good luck!

  4. Oatmeal is great... but so is a quick 2 egg, tomato and cheese omelet! Yogurt is a good kickstarter, paired with a granola bar for an on-the-go breakfast. But my favorite is a toasted bagel with cream cheese, tomato slice and salt and pepper. YUM

  5. a soft boiled egg with toast works for me pretty well. a pile of greens with a poached egg? looking through the archives of the simply breakfast blog always inspires me. good luck!

  6. I keep coming back to oatmeal w/ fruit.
    the oatmeal has protein and I find I don't get hungry until noon.
    changing the fruit w/ the season keeps it interesting. I also add different spices like ginger or cinnamon, depending on the fruit. And I change the sweeteners too -sometimes maple syrup, sometimes brown sugar or honey. If the fruit is frozen I put it on the stove for a few minutes with the syrup or sugar and it turns into a nice sauce.
    nuts are good additions and add more protein as well. and milk for calcium.

  8. it's great to read that we are on the very same page. let's see. i'm going to try more veggie scrambles, some sauteed greens, green smoothies, peanut butter toast, yogurt with fruit and nuts (i'm thinking if i buy full fat yogurt then i won't drown it in sugar) and oatmeal. i hope you'll post more of your breakfasts here.

  9. Oatmeal tends to give me the most energy. I know this and still, I do not eat it often enough. My last bowl was filled with good stuff--old fashioned oats, dried cherries, chopped and toasted pecans, raw wheat germ, peanut butter, coconut, crushed flax seeds, brown sugar, milk, and fleur de sel. I know it seems like a ton, but I use just a little bit of each topping. I also love Shari's idea of sauteed greens (maybe over a little polenta or quinoa...) Today I ate a waffle and it yielded zero energy. Tasty, but bad choice for me.

  10. Have you tried Greek yogurt? It has a higher protein content which seems to help hold off hunger for longer. Personally, I do two eggs on a roll most mornings.

  11. Though I branch out sometime, I usually rely on oatmeal and fruit for those days that I have to get through the morning without a snack (but I do love the mid-morning snack!)
